You will need:

1 ½ kg green prawns,

2 tablespoons oil,

2 onions, sliced,

Garlic paste (2 cloves),

2 teaspoons curry powder,

1 teaspoon ground turmeric,

2 tablespoons vinegar,

2 ½ cups water,

1 cup coconut milk,

2 eggs, lightly beaten, and


To make it:

1. Peel the prawns leaving tail intact, and remove back vein.

2. Heat oil in a frying pan, sauté onions, garlic paste and chilies for 3 minutes. Add turmeric and sauté it for 1 minute.

3. Add vinegar, water, and half the coconut milk. Simmer it uncovered, and in over moderate heat for 10 minutes.

4. Add prawns, simmer for further 10 minutes. Shake pan occasionally to prevent sticking. Add salt to taste.

5. Add the remaining coconut milk. Pour in eggs, shake the pan gently, and cook for further five minutes until the eggs are cooked.
