What you need:
2 teaspoons oil,
2 large onions, thinly sliced,
Crushed garlic (2 cloves),
1 ½ chopped green capsicum,
¼ cup chopped fresh coriander,
4 boiled eggs, cut in half,
1 tablespoon vinegar,
1 teaspoon ground cumin
To make it:
1. Heat oil in a frying pan, sauté onions until tender.
2. Add garlic, capsicum and coriander, sauté for 2 minutes. Remove from the heat.
3. Add eggs, vinegar and cumin. Stir it until it combines.
4. Bake in moderate heat over until eggs have set.
