What you need:

3 teaspoons of oil,

1 large onion, sliced,

4 potatoes, quartered,

1 teaspoon ground cumin,

2 teaspoons of chilly powder,

½ teaspoon ground ginger,

¼ cup water,

1 kg spinach leaves roughly chopped, and


To make it:

1. Heat oil in a saucepan, sauté onion until it becomes brown.

2. Add potatoes, cumin, chilly powder, ginger and water. Cover it and over low heat for five minutes, stir occasionally.

3. Add some water.

4. Add spinach, cover, and cook for 2 minutes. Add salt.

5. Uncover pan, simmer until water has evaporated. Replace lid, and let it cook over very low heat for 20 minutes or until potato gets tender.

This serves three to four people.
